One of the simplest, freshest and healthiest dishes we can prepare in summer is cold soups. In this recipe, avocado will be the ingredient responsible for flavoring the cream, which is also made with onions, milk and green chilies. After serving, add a few cubes of watermelon on top and you get a bite with a bigger texture, softer and sweeter taste.
cold avocado and watermelon soup
1 large avocado
½ small spring onion
1 green chili
75 ml of milk
250 ml of vegetable soup
2 slices of watermelon
1. Cut the onion into very small cubes and fry in a pan with a little olive oil. Add a pinch of salt.
2. Place in the cup of a blender and add the seedless green chilies, avocado pulp, vegetable stock and milk. Blend until you get the soup (if necessary, adjust the consistency by adding more liquid). Taste and adjust the seasoning.
3. Serve on plates with the diced watermelon, chopped fresh coriander and a drizzle of olive oil.
