Soup season is here! If we talk about “comfort food”, then we have to talk about comforting, homey food, or yes, then we have to talk about soup. Ideal on these cold days, to drink something warm, very delicious.
Super nutritious, they yield a lot and last for several days. You can even freeze them in portions so that you always have a soup on hand.
You can eat it as an appetizer, alongside a main course, or even for dinner, at the end of a light day. Which team are you from? I will share with you my own version of pumpkin soup, and I ask that if you decide to, tag me in your posts (@federicogonzaleztalvi)!
Ingredients
Pumpkin 1 kg
Red onion 1 unit
Green onion 1 unit
Garlic 2 cloves
1 liter of vegetable soup
grated ginger 1 tbsp
Add salt and pepper as needed
*Cream or coconut milk is optional
